GOURMET “BULKORN” - LARGE GROATS FROM EINKORNS WITH SNAILS

Preparation: 60 minutes

2 teacups large groats from einkorn
½ teacup olive oil
2 strings fresh onion
1 onion
200-300 gr. Spinach or leeks
1 teaspoon red pepper
Fresh-powdered black pepper
1 string savory
½ string parsley
1 teacup milk

SNAILS:
2 kg. fresh snails
Salt
1 onion
10 grains black pepper
2 laurels
Herbs
Butter

Chopped onions fry in olive oil. Add the einkorn and leeks. Sprinkle with red and black pepper. Add milk and some gravy from the snails, salt. Sprinkle with powdered parsley and savory. Boil around 20 minutes.

THE SNAILS:

Wash and boil in salted water. Add the spices. After 20-30 minutes cool them. Remove the shells. Fry a little with butter and red chilly pepper. Add chopped onion and savory. Gravy use for the einkorn.

Arrange in a plate with salad and some of the shells.
