STUFFED CARP WITH TINY GROATS FROM EINKORN

Preparation: 70 minutes

2 carps around 1.33 kg. ;
white wine 100 ml. ;
salt;
1 lemon;

For filling:
Olive oil;
Tiny groats from einkorn-around 150 grams;
Mushrooms 600 grams;
2 carrots;
2 onions;
Garlic 4 cloves;
Walnuts-150 grams;
150 ml. white wine;
Herb;
Powdered black pepper;

How to cook:

The carps washed and cleaned in advance , treat with some salt inside and outside. Pour the lemon juice all over. Let them stay till the filling is ready.

Fry minced onions, carrots and then add the garlic and chopped mushrooms. Cook so there Is no water. Mix with the groats. Add the salt, black pepper and herbs, 50 ml. white wine. In a few minutes take the pan from the heat. Add chopped walnuts and stir. Fill the carps and sew them. Put them in a suitable baking dish and situate the rest of the filling around them. Pour a little olive oil, the rest of the wine and some water. Bake around an hour in medium heat.
