STUFFED COURGETTES WITH MINCED MEAT AND GROATS

Preparation: 45 minutes

1 kg. courgettes

300 grams minced meat mixed pork and beef

¾ teacup groats

1 carrot

½ string of dill

2 tomatoes

1 onion

3-4 table spoons olive oil

1 spoon salt

HOW TO COOK:

Wash the courgettes. Don’t peel them. Cut in two and dig the soft middle. Soft pieces chop. Put that aside. Chop the onion, the carrot and the chopped courgettes. Fry in a pan with olive oil. Wash the groats and take it in the pan. Stir a little. Add the minced meat and cook till the water is gone. Add peeled and chopped tomatoes, the dill, the garlic and black pepper. Mix well. Put the courgettes in a baking dish and fill them with the mix. Add a teacup of warm water and a little olive oil. Cook in middle heat around 40-45 minutes.
